Squares with blueberries and pineapple


I have always enjoyed healthy snacks and rare are the days when I do not collate.

I have a small appetite so I eat a little, but often. I almost always favour fruits and vegetables for a good snack except that from time to time it's nice to have a choice of something else.

So I took advantage of having some frozen blueberries and pineapples to make a great recipe for blueberry and pineapple squares. We could also make the recipe with other fruits according to our tastes and what we have in the fridge.

INGREDIENTS
Blueberry and pineapple jam
500 ml (2 cups) frozen blueberries
375 ml (1½ cups) fresh pineapple can be chopped
45 ml (3 tablespoons) chia seeds
1/4 cup (60 mL) maple syrup
Dough
1½ cups (375 mL) whole wheat flour
2.5 ml (1/2 teaspoon) baking powder
2.5 ml (1/2 teaspoon) of nutmeg
250 ml (1 cup) large oatmeal
83 ml (1/3 cup) coconut oil or butter at room temperature
83 ml (1/3 cup) brown sugar
1 egg
5 ml (1 teaspoon) vanilla
45 mL (3 tablespoons) of soy milk or plain milk

PREPARATION
Preheat the oven to 350 ° F.

In a cauldron, over medium heat, combine the blueberries, pineapple and maple syrup. Heat for 15 minutes, stirring regularly.
Add the chia seeds, mix well and heat for 5 minutes. Remove from heat and stir in a food processor or blender. Let cool.
Dough
In a bowl mix dry ingredients.
In another bowl, combine the coconut oil, brown sugar, egg and vanilla. Mix with an electric mixer for one minute.
Pour the wet ingredients over the dry ingredients, add the milk and mix well.
In a baking dish (8x8), cover with parchment paper and spread le of the dough by pressing well to cover the bottom.
Pour the jam and cover the dough completely.
Use the rest of the dough by crumbling it all over the jam.
Bake in the centre of the oven for 30 minutes.
Let cool before unmolding and cutting.
