Bowl of Poké with salmon and mango
Do you know the bowl of poke (Poke bowl, pronounced "Pokai")?
Native to Hawaii this diced fish salad has become very popular in North America in recent months and for good reason. It's a delicious healthy meal.
Personally, when I discovered this meal, I immediately fell in love. It's a lot less complicated than making sushi, there's more fish, it's tasty and fresh and it's pretty fast.
I was also in a super tired pass with acute nausea (yes I know it's not a real word!) To cook. I only wanted to eat good simple and fresh meals and that's exactly what this recipe allowed me to do. I even prepared it to receive and it was a real success because everyone can make their own bowl with the ingredients they prefer.
So here is my version of the poke bowl.
INGREDIENTS
350 g fresh salmon cut into cubes
5 ml (1 teaspoon) rice vinegar
5 ml (1 teaspoon) sesame oil
1 mango cut into strips
500 ml (2 cups) cooked sushi rice
1 firm avocado cut into strips
1 red pepper cut into strips
1 chopped green onion
Sesame seeds
Ginger marinated to taste
Spicy Mayonnaise:
30 ml (2 tablespoons) mayonnaise
5 ml (1 teaspoon) of Sriracha
PREPARATION
In a bowl, combine salmon, rice vinegar and sesame oil.
Leave to rest in the fridge for 10 to 15 minutes.
In two bowls, place the rice, avocado strips, mango and pepper. Sprinkle with sesame seeds and green onion.
In a bowl, combine mayonnaise and Sriracha and place on salmon to taste.
Serve with marinated ginger to taste.
