Vegetable salad and feta


We want lots of ways like that to cook the beautiful fresh vegetables! I love raw vegetables and salads, but especially salads no salad.

With a little olive oil, lemon juice and feta, this is the magic recipe for a fresh, fast, simple and nutritious accompaniment.

INGREDIENTS

500 ml (2 cups) cucumber pieces
1 cup (250 mL) cherry tomatoes, halved
1 cup (250 mL) yellow or green zucchini cut into pieces
500 ml (2 cups) corn cooked in beans
200 g cubed feta cheese
30 ml (2 tablespoons) fresh thyme
30 ml (2 tablespoons) of extra virgin olive oil
Juice of a small lemon
Salt and pepper
PREPARATION

Mix all the ingredients and serve.
