Poached salmon with coconut milk in a slow cooke
I am a Gaspesian and my spouse is from Bas-St-Laurent. Fish and seafood are an integral part of our weekly diet. There are so many different varieties and flavors that you do not get tired of eating them. A weekly convenience meal will be for us, a good white fish cooked in the pan, with a drizzle of olive oil and lemon juice, accompanied by a nice salad.
I know it's not everyone who loves fish, and often it's harder to put on the menu. Oily fish such as salmon are more tasty, but often, it goes less well.
The trick with the fish is to add flavors so that it is not bland and especially not too much to cook. That's why I thought of cooking this slow cooker recipe in coconut milk. First, to offer deep and tasty flavors, and secondly to keep the fish soft and tender.
Doing it with the slow cooker makes the task even easier.
INGREDIENTS
1 salmon fillet (about 500 g)
1 finely chopped onion
1 red pepper cut into large pieces
1 yellow pepper cut into large pieces
1 C. turmeric
1 can of coconut milk (398 ml)
Salt and pepper
PREPARATION
In the slow cooker, place the ingredients in order and pour the coconut milk over the salmon. Add ½ cup of water, salt and pepper.
Cook for a minimum of 2 hours or until fish is cooked.
NOTES
My salmon was frozen, so I cooked it 3 1/2 hours instead of 2 hours. You can therefore adjust the cooking time.
The recipe can also be done in a cauldron. Cook over a low heat for 20 to 30 minutes.
Serve with rice to complete the meal.
Which salmon to choose?
When talking about salmon, it is often difficult to make a good choice.
Wild salmon is harder to find, more expensive, but contains more nutrients. It is also more ecological, but extreme fishing makes this wild fish more and more endangered.
Farmed salmon would be less nutritious. This crop would use more chemicals, and the salmon would be crammed into cages.
Given these choices, I think it is better to choose wild salmon, and consume less often.
Trout and herring are excellent alternatives for high-omega-3 meals. It may also be interesting to supplement your diet with an omega-3 capsule.
