Spinach and bacon stratta


I love to receive for brunch. It's so nice to start the day with people we love and eat quietly. Well, with children say that the quiet is rather rare, but for the rest it's just as pleasant. I like cooking for guests, I like to share a meal and to feed my family with love. But (yes, there is a but, I do not want to spend hours cooking!).

I also like eggs in the morning, but sometimes the scrambled eggs or the eggs turned not pées, it's a little annoying.

So I thought to create a simple recipe, which is prepared quickly or the day before and for which you can use the remains of old bread and everything that hangs in the fridge. It's perfect to avoid waste and I promise you, all your guests will feast.

INGREDIENTS
1.5 L (6 cups) dry crusty bread
500 ml (2 cups) young spinach sprouts
6 slices of cooked bacon
1 cup (250 mL) grated cheese (use whichever you prefer)
8 eggs
250 ml (1 cup) of milk
2 chopped green onions
pinch of hot pepper flakes (optional)
salt and pepper

PREPARATION
Grease an 8 x 8 square baking dish.
Place half the bread in the bottom of the dish and cover with spinach and half of the cheese.
Add the remaining bread, bacon and finish with the remaining grated cheese.
In a bowl, beat the eggs and add the milk. Add green onions, hot pepper and season with salt and pepper.
Pour the mixture over the bread and let it rest in the fridge for 1 hour. Preheat the oven to 350 ° F.
Bake in the center of the oven for 50 to 60 minutes.
