Dragon bowl with tempeh



Spaghetti is a good convenience store, but sometimes I like to eat vegetables! I do not like cooked vegetables so much, I discovered the beautiful big dragon bowls with a ton of fresh and raw vegetables.

No, but is not it beautiful? We can put all the vegetables we love and all the colors. With a vegetable protein like tempeh or eggs, chicken or legumes it's a really versatile choice.

Here is one of my favorite versions of the dragon bowl.


INGREDIENTS
Marinated tempeh
1 package of cubed tempeh
30 ml (2 tablespoons) of sesame oil
15 ml (1 tablespoon) rice vinegar
Salt and pepper
Dragon bowl
2 grated carrots
2 zucchini grated or noodles
250 mL (1 cup) chopped red cabbage
250 ml (1 cup) edamame
500 ml (2 cups) rice or quinoa
500 ml (2 cups) alfalfa
4 hard boiled eggs
1/4 cup (60 mL) vinaigrette to taste


PREPARATION
Marinated Tempeh:
In a bowl, mix all the ingredients for the marinade and add the tempeh. Marinate in the fridge from 30 minutes to 24 hours.
In a warm, slightly oiled pan, sauté the tempeh for about 5 minutes.
Dragon bowl:
Assemble the bowl by dividing all the ingredients into 2 large bowls, add the tempeh, a vinaigrette to taste and garnish with black sesame seeds (optional).
