Seared zucchini with mint
I do not know if you're like me, but I think that fresh mint smells like heaven. Small flat on the other hand, I never know how to integrate it into my dishes.
Well, here is a suggestion of accompaniment inspired by Mediterranean cuisine, where we find a lot of zucchini and a lot of olive oil. Take the opportunity to cook our beautiful zucchini from Quebec. It will arrange very well your grill and fish on the BBQ.
INGREDIENTS
45 ml (3 tablespoons) of olive oil
1 clove of chopped garlic (or 2.5 mL (1/2 teaspoon) of chopped garlic in jar)
4 zucchini (green or yellow) cut into thin slices
125 ml (½ cup) coarsely minced fresh mint (
1 pinch of salt
PREPARATION
In a large skillet over medium heat, heat oil and cook garlic for about 1 minute.
Add zucchini and cook for 7 to 8 minutes (until tender) stirring occasionally.
Remove from heat and add mint and a pinch of salt. Here!
